So, I told you in a previous post that I would let you know when the hens had realized it was time to get busy with laying eggs. Well, I’m here to tell you that it has happened! Just to put that into some perspective, During the doldrums of January, our low point for egg production was around 65 eggs/day. Or almost 5 1/2 dozen. So, that meant that we were producing around 38.5 dozen eggs/week. We promise a minimum of 1 case/week to the Motley Cow and Deluxe Cakes and Pastries respectively, which equates to 30 dozen/week. This leaves 8.5 dozen for our other customers. Pretty skimpy.
Though an increase has been noticeable over the last month, in the past 10 days the number jumped from about 80 eggs/day to 150 eggs/day! This means that we are now producing 87.5 dozen eggs/week. Needless to say we are nearly able to provide the bakery with all the eggs it needs and have quite a supply for you all to buy on Saturdays. Today’s total so far is 167 and counting!!! In a week or two we will likely begin selling eggs to the Hamburg again for their up-charge menu. Take home message: we will have a greater number of eggs tomorrow at the Winter Market.
